Yeo Valley Biscuits

Autumn has always been my favorite time of the year to spend quality time outdoors with my family. There's something magical about taking long walks amidst the crisp air, kicking through piles of crunchy leaves, and enjoying the vibrant colors of nature. This season offers just the right balance—mild temperatures with a refreshing coolness that keeps you energized. This particular weekend, I decided to pack a few snacks and head to the nearby woods. I knew the kids would love it, so I prepared some homemade biscuits using Yeo Valley yogurt instead of butter to make them a bit healthier. It was an experiment, but they turned out delicious! To start, I combined 1/4 cup of coconut oil, 1/2 cup of coconut sugar, and 1/4 cup of caster sugar in a bowl. Next, I added an egg, a teaspoon of honey, and 1/4 cup of Yeo Valley Greek Yogurt with honey. In another bowl, I mixed together 1 cup of plain flour, 1 teaspoon of cinnamon, and 1/4 teaspoon of baking soda. I then created a well in the dry ingredients and poured in the wet mixture, carefully combining everything without overworking the dough. After forming it into a ball, I refrigerated it overnight. The next day, I rolled the dough into small balls and flattened them slightly with a fork before baking them in the oven at a moderate temperature for about 7 to 10 minutes until golden brown. These biscuits were light, flavorful, and a hit with everyone! Alongside the biscuits, I also packed some Yeo Valley Little Yeos yogurts, fresh fruits, and a bottle of water. As we walked deeper into the woods, we stumbled upon a fallen tree that provided the perfect spot for a break and some climbing fun. The kids loved exploring every nook and cranny of this natural playground. When hunger struck, the Yeo Valley Little Yeos yogurts came to the rescue.
