Christmas Mince Pie Recipe

This mince pie recipe is undoubtedly my favorite. It was passed down to me by my grandmother, and every bite brings back memories of Christmases past. Add two finely chopped satsumas, one apple, and the zest of a lemon for a fresh twist. Dust with icing sugar just before serving. For the pastry, combine 375 grams of plain flour, 260 grams of unsalted butter, and 125 grams of caster sugar. Mix it all together until it forms a crumbly texture. Beat in two large eggs—one for the dough and one for glazing later—and knead the dough on a floured surface. Wrap it in plastic wrap and chill it in the refrigerator for about 10 minutes. Preheat your oven to 220°C (200°C fan/gas mark 7). Roll out the chilled dough to about 3-4 mm thick. Use cookie cutters—stars and circles work wonderfully—to cut out the base shapes. You should be able to get around 15 bases. Place these into the pie tins. Fill each base with a generous tablespoon of the mincemeat mixture, then brush the edges lightly with beaten egg to help seal the tops. Cut out the top pieces from the remaining dough using larger cutters. Press these onto the filled bases, creating a slight indentation for decoration. Brush the tops with more beaten egg and sprinkle with additional caster sugar. Create small slits in the tops to let steam escape while baking. Pop them into the oven for 15-20 minutes, or until they’re golden brown. Allow the pies to cool in their tins before transferring them to a wire rack. Finish off with a light dusting of icing sugar right before serving. For an extra indulgent touch, serve these mince pies with a dollop of cream, a scoop of vanilla ice cream, or even a splash of brandy cream.
