Christmas Mince Pie Recipe

This mince pie recipe is, without a doubt, my absolute favorite. My Nan passed this along to me, and it's the quintessential taste of Christmas for me. I recently made these over the weekend, and they turned out beautifully. The aroma of the buttery pastry mingling with the sweet spiciness of the mincemeat is just heavenly. I thought I'd share the recipe so you can enjoy these delightful treats too. To start, here’s what you’ll need for the mincemeat filling: - About 600g of store-bought mincemeat - Two satsumas, finely chopped - One apple, finely diced - Zest from one lemon - Icing sugar for dusting And for the pie crust: - 375g of plain flour - 260g of unsalted butter - 125g of caster sugar - Two large eggs (one for mixing and one for glazing) - Pastry cutters in your preferred shapes Now let’s dive into how to prepare these festive pies. First, mix the flour and butter until it resembles breadcrumbs. Then add the caster sugar and one of the beaten eggs. Once combined, knead the dough on a floured surface and wrap it in cling film. Chill it in the fridge for around 10 minutes. In the meantime, prepare the filling by mixing the mincemeat with the chopped satsumas, diced apple, and lemon zest. Preheat your oven to 220°C (or 200°C fan/gas 7). Roll out the chilled dough to about 3mm to 4mm thickness. Cut out enough bases—around 15 should do—and place them into your tart tins. Fill each base with a generous tablespoon of the mincemeat mixture. Brush the edges of the pies with some beaten egg to help seal the tops. Roll out the remaining dough to cut out the top lids, either stars or circles depending on your preference. Press the tops onto the bases, pressing down lightly to create a decorative indent. Glaze the tops with more beaten egg, sprinkle with extra caster sugar, and make a small slit in the top to allow steam to escape while baking. Bake for 15 to 20 minutes until golden brown. Let them cool before removing them from the tins, then dust with icing sugar just before serving. Serve these delightful pies with a dollop of cream, vanilla ice cream, or even brandy cream for an extra special touch!
